Skirt Steak is rich and beefy, and is absolutely delicious. It is long, flat, and prized for its flavor rather than tenderness. It is not to be confused with Flank Steak, a generally similar adjacent cut nearer to the animals rear quarter. This popular steak is delicious to use when making fajitas and cooks well with marinades and sauces.
